Seductive, fresh, tantalisingly persistent

On the Nose

Rose gold in the glass. Prominent aromas of red berries, Turkish Delight and pomegranate rise from the glass, with delicate undertones of violets weaving through.

On the Palate

Seductively fresh and persistent a lingering aftertaste of strawberry, nougat and sliced grapefruit. The mousse is fine and soft, leaving the palate with a tantalising, long-lasting sensation.

The Process

Made withdelicacy and originality

  1. Hand Harvest at Dawn

    Grapes are harvested into small bins in the cool of the morning to preserve freshness and natural acidity. The 2020 vintage was marked by exceptional summer sunshine followed by a slow, cool autumn — ideal conditions for Chardonnay.

  2. Free-Run Juice Only, Stainless Steel

    Full malolactic fermentation is completed on the base wine to soften the 2021 vintage's naturally high acidity — adding the creamy texture and depth that balances the wine's vibrant red fruit character.

  3. Full Malolactic Fermentation

    Full malolactic fermentation is completed on the base wine to soften the 2021 vintage's naturally high acidity — adding the creamy texture and depth that balances the wine's vibrant red fruit character.

  4. Second Fermentation & 30 Months Maturation

    The traditional method second fermentation takes place in bottle, followed by 30 months of bottle maturation on the lees — developing the wine's fine, soft mousse and complex nougat and brioche notes before disgorgement.
